She posted a while ago a brownie recipe that he made – and it wasn’t until yesterday that I got the chance to try it 1st hand at her house.
It was so good.
I am really picky with brownies.. and find that most home made brownie recipes are either not sweet enough or to dense. These were PERFECT IMO… I loved them, my husband did and even our kids. A definite must to add to my cooking book.
Aliesha and Tad came over for dinner – she brought us an entire meal – and even some extra groceries. It was so sweet and we are so glad we are able to spend these next few weeks with people like them and others we love so much. I wasn’t sure if she was bringing dessert (she did haha – I should of never doubted that! she covers all the bases) so I made these brownies & was so pleased with how they turned out.
So here is the recipe!
1 box chocolate cake mix (I used devils food cake-mix)
1 large egg
1/2 cup sucanat (or dark brown sugar)
2 oz water (Just under 1/4 cup)
1/4 cup organic coconut oil (canola would work as well)
1/3 cup brewed coffee
(In Shannons original recipe it called for more water and less coffee… but at dinner on Monday, Shannons husband told me he added more coffee the next time and found it made for richer taste – so I tweaked it for that reason) Directions:
Pre-heat oven to 325
Grease a 9×13 inch cooking dish (I used glass)
Combine all ingredients until blended (I used my kitchen aid mixer).
I honestly am not sure how long I cooked it, but I want to say around 30 minutes. Just keep the oven light on and keep an eye on it. You should be able to stick a toothpick in and it come out ALMOST clean. Don’t over do them otherwise it isnt as good.
Serve it with ice cream for an extra special treat :) – but seriously eating these alone is a treat in itself.
