One of the 1st meals we had when we moved here… was an amazing dish that my sweet neighbor Sondra made for us. Her family has been dear to use from the beginning, taking us right in. She has 5 kids – 3 of her girls I recently photographed :) – and her and I go to group once a week at the church together.
I loved the meal so much I had to get the recipe :)
This past week I made it. Mmm mmm mmm!! and a great meal for a larger group of people, this feeds A LOT!!
Pesto Chicken Casserole:
FEEDS, a lot – it fed her family of 6 and our family of 5 -with plenty left over.
2 ½ cooked chicken, Chopped
1/3 cup parmesan cheese
1 (10 oz) can cream of chicken soup (undiluted)
1 (14 oz) jar artichoke hearts (I chopped mine up)
½ cup oil packed sun-dried tomatoes (cut into thin strips – use scissors, works great)
1 container of pesto (I used the jar kind, its near the Pasta Sauce)
1 (16 oz) pkg. bow-tie pasta, cooked
Preheat oven to 350 degrees
Combine chicken, cream of chicken soup, pesto, artichoke hearts, sun-dried tomatoes and bow tie pasta.
Place in a lightly greased (or sprayed) 9×13 or 1 ½ quart baking dish. Sprinkle with Parmesan Cheese.
Bake for 35 to 40 minutes at 350 degrees.
