Oven Fajitas! Fast & Easy

Very simple and fast Oven Fajita recipe. Done in 35 minutes!

This is one of those meals that you can whip up last minute with very little thought. I have been known to throw this together completely spur of the moment and each time its amazingly moist and good. All of my kids eat these fajitas.

Very simple and fast Oven Fajita recipe. Done in 35 minutes!

Oven Fajitas! Fast & Easy


  • 1 Tbsp chili powder
  • ½ Tbsp paprika
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp cumin
  • 1 tsp sucanat
  • ½ tsp salt
  • ½ Tbsp corn starch
  • Fajitas:
  • 2 small onion
  • 2 medium green bell peppers
  • 1 medium red bell pepper
  • 1 lb. chicken breast*
  • 2 Tbsp oil of choice (I used EVOO)
  • 1 medium lime (optional)
  • Tortillas
  • ½ cup sour cream (optional)
  • ¼ bunch cilantro (optional)


  1. Preheat the oven to 400 degrees. Mix together all your spices for the seasnoning mix into a small bowl and set aside. (chili powder, paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, salt, and corn starch).
  2. Cut up your veggies into strips. Place them in a large 9×13 inch casserole dish. Slice the chicken into strips as well and place them into the dish.
  3. Sprinkle the seasoning over the meat and vegetables. Drizzle the oil over everything and then toss all your ingredients until everything is well coated in oil and seasoning. Bake for 35-40 minutes, You can then squeeze the juice from half of the lime over top of the meat and vegetables after it comes out of the oven.
  4. Serve up and enjoy. You can top the tortilla's with cilantro and add all your goodies into the fajita as well. I also add cheese onto ours :)
